Spanish chorizo typically a smoked and cured sausage, can be eaten without being cooked. It is usually made with paprika and garlic. It can either be sweet or spicy depending on the type of paprika used. The chorizo’s deep red color and smoky flavor are because of the paprika. Spanish chorizo comes in two forms. One is fully cooked and soft and the other one is fully cooked and dry.  

Mexican chorizo is typically made with fresh, raw uncooked pork that needs to be cooked. It is spiced with vinegar and chile pepper. For those who do not prefer pork, beef, and vegetarian versions of Mexican chorizo are also available.

  • Skillet or frying pan: for even cooking of chorizo and eggs
